Nutritious Spring Salad

This refreshing spring salad is perfect after a warm day. Lots of nutrition and hydration without lacking in taste! 

Ingredients

  • 2 cups of greens

  • 1 cup plum tomatoes

  • 1 cup cooked chickpeas

  • 1/2 avocado

  • 1 cucumber

  • 1 cup red onion

  • 1/4 cup olive oil 

  • 1/4 cup herbs of choice

  • 2 limes

  • sea salt and pepper to taste

          Instructions:

          1. Chop the greens, cucumber, plum tomatoes, and red onion.

          2. Mix with chickpeas and avocado in a salad bowl.

          3. In a small bowl, whisk together oil, herbs, limes, salt, and pepper to create salad dressing. Pour over salad.

          4. Enjoy.
