Lemon Lime Super Salad

The name says it all, this is a super salad that will have your taste buds ringing! Not only does it have a lot of vitamins and minerals, even the heartiest eaters can enjoy it for lunch or dinner without wanting to eat something else to go along with it!

Ingredients
  • 4 cups kale, chopped

  • 1/2 cup quinoa, cooked

  • 1/2 cup sliced almonds

  • 1/2 cup goji berries

  • 1 avocado, diced

  • 2 lemons, juiced

  • 2 limes, juiced

  • 1/4 cup olive oil

  • 1 tsp sea salt

  • 1/4 tsp pepper

Instructions
  1. Place kale in a large salad bowl. Toss and top with the quinoa, almonds, goji berries, and avocado.

  2. Whisk together the olive oil, lemon, lime, salt, and pepper and pour on salad as a dressing.
