Simple Plant Based Tacos

 These tacos are plant based and super easy to make. Just sauté your vegetables, add chickpeas and there you have it!


  • 1 Red pepper

  • 1 Green pepper 

  • 1 Red onion

  • 3 Large portabella mushrooms 

  • 16oz Chickpeas 

  • 1 Tsp Onion powder

  • 1 Tsp basil

  • 1 Tsp oregano

  • 1/2 Tsp cayenne powder

  • 1 Tsp sea salt

  • Tortillas 


  1. Slice peppers, onion, and mushrooms.

  2. Sautee with all seasonings until all vegetables are tender.

  3. Add chickpeas to the pan with vegetables and combine well. Salt to taste.

  4. Warm tortillas in a pan on medium heat for approximately 20 seconds on each side.  

  5. Serve vegetables on tortillas and top with guacamole, salsa, or any other toppings of your choice!
