A nutrient and flavor dense dish consisting of a classic combination of beans and greens. This dish makes for one wholesome lunch or light dinner all on its own, but can also play the perfect side!
Ingredients

1 lb garbanzo beans, cooked

1 lb swiss chard

8 oz portabella mushrooms, cubed

2 tbsp shallots, finely chopped

pinch red pepper flakes

1 tsp. sea salt

2 tbsp. olive oil
Instructions

Wash the chard in cold water. Tear the stems from the leaves and chop crosswise into 1/2 inch pieces; stack the leaves and coarsely chop. Keep stems and leaves separate

Heat olive oil in a skillet over medium heat. Add mushrooms and cook until soft. Stir in the shallots and red pepper flakes. Cook until shallots soften.

Add the chard stems and beans. Cook, stirring occasionally, until the stems soften. Stir in the leaves a handful at a time until wilted. Cover and let simmer until the chard is tender. Taste and season with salt and pepper.
