Easy Zucchini Fritters

These zucchini fritters are tasty, easy to make, and loaded with plant power from freshly shredded zucchini and chickpea flour. They can be filling enough to enjoy alone for breakfast, or as a side dish for lunch or dinner. 

  • 3 zucchini

  • 1/2 cup Chickpea flour

  • 1/2 cup chopped red and green onions 

  • ½ tsp cayenne powder

  • 1 tsp onion powder

  • 1 tsp oregano

  • 1 tsp parsley

  • 3 garlic cloves

  • 1tsp salt 

  • ¼ cup almond milk or any other plant based milk of choice

  1. Shred zucchini in food processor or with manual grater

  2. Place shredded zucchini in a strainer and squeeze liquid out with hand

  3. Mix shredded zucchini with all other ingredients

  4. Heat a pan with oil to cook fritters

  5. Scoop about ¼ cup of mixture into pan and flatten with spatula

  6. Cook on medium heat for approximately 3-5 minutes on each side, or until becoming browned and crispy on each side
