This dairy-free, plant based version of a quesadilla is ridiculously simple to make, almost as easy as it is to eat! It’s a quick but healthy option for a busy day when you don't have much time to spend on preparing food. Instead of using wheat tortillas, try a more nutrient dense option, such as tortillas made from spelt, cassava, or almond flour, to up your nutritional intake even more!
Hummus (link to hummus recipe)
Sautéed tomato and red onion, sliced
Toppings of choice- salsa, avocado, or hot sauce
1. Spread desired amount of hummus onto one tortilla and top with sautéed tomato and red onion slices.
2. Fold tortilla in half and warm on medium heat for approximately 20 seconds on each side.
3. Top with salsa, avocado, or hot sauce!
