Brussel Sprout Salad

Ingredients

  • 1 pound brussel sprouts, cooked

  • 1/2 cup dry quinoa, cooked

  • 10 almonds sliced

  • 1/4 cup parsley, chopped

  • 1/4 cup cranberries

  • 1 red onion, caramelized

  • Salt and pepper to taste

Dressing

  • 1 orange, juiced

  • 1 tsp orange zest

  • 1 tbsp maple syrup

  • 2 tsp mild mustard

  • 1 tbsp lemon juice

Instructions:

1. Add all the salad ingredients to a large bowl.

2. Mix the dressing in a small jar or bowl. Pour over the salad and mix well.
