Refreshing Quinoa Salad

Refreshing, filling, with an easy to eat flavor. Makes for a perfect lunch salad or a great quickly prepared dinner!

  • 1 1/2 cups Quinoa

  • 3 cups water

  • 1cup cherry tomatoes

  • 1 cup cucumbers, diced

  • 1 cup red bell pepper, diced

  • 1 cup yellow bell pepper, diced

  • 1/2 cup fresh parsley, finely diced

  • 1/4 cup fresh basil, finely diced

  • 1 tsp ground ginger

  • 5 tbsp lime juice

  • 3 tbsp olive oil

  • salt and pepper to taste

  1. Rinse quinoa in a fine mesh strainer. Add quinoa and water to a pot, cover, and bring to a boil. Reduce to simmer for 20 minutes or until water is gone. Let sit for 5 minutes, use a fork to fluff.

  2. Add quinoa to a large mixing bowl along with tomato, cucumber, red pepper, yellow pepper, parsley, basil, ginger, lime juice, olive oil, salt, and pepper. Toss to mix everything together.
