Ingredients

1 1/2 cups Quinoa

3 cups water

1cup cherry tomatoes

1 cup cucumbers, diced

1 cup red bell pepper, diced

1 cup yellow bell pepper, diced

1/2 cup fresh parsley, finely diced

1/4 cup fresh basil, finely diced

1 tsp ground ginger

5 tbsp lime juice

3 tbsp olive oil

salt and pepper to taste
Instructions

Rinse quinoa in a fine mesh strainer. Add quinoa and water to a pot, cover, and bring to a boil. Reduce to simmer for 20 minutes or until water is gone. Let sit for 5 minutes, use a fork to fluff.

Add quinoa to a large mixing bowl along with tomato, cucumber, red pepper, yellow pepper, parsley, basil, ginger, lime juice, olive oil, salt, and pepper. Toss to mix everything together.
